The carnival is celebrated in almost all the localities of the region with risottati, games, music, parades and masked balls.

Carnival is traditionally linked to entertainment and synonymous with unruliness, transgression and excess. The traditional dish of the Carnival was the "risotto" accompanied by the "luganighe" (sausages). Chestnuts with cream were also eaten. Carnival was one of the rare occasions for a festive meeting; music and dance encouraged contact between young people. In the villages and towns the carnival was characterized by theatrical performances, fancy dress parties and the appearance of satirical magazines. The end of the Carnival was announced by a bell and in some places by a bonfire.
